What is yakitori?

Yakitori is a Japanese skewer dish in which chicken is cooked over white-ash binchotan charcoal. At Hotori we take a beak-to-tail approach, serving seventeen distinct cuts from Fosse Meadows free-range chickens — from the prized bonjiri (tail) to the wing crown — each seasoned and grilled differently.

What is Edomae sushi?

Edomae is the traditional Tokyo style of sushi making, dating to the Edo period. Fish is aged, cured, marinated or torched to coax out fullest flavour before meeting the rice. Our Tokyo-trained chef works in this tradition at our eight-seat sushi counter.

Does Hotori cater for dietary requirements?

Our kitchen handles fish, shellfish, soy, wheat, sesame, eggs and nuts; we cannot guarantee any dish is completely free from traces. We have vegetable tempura and several plant-based starters. Please tell us about allergies or intolerances before ordering.

Can I have an omakase experience at Hotori?

Yes. Our chef's omakase is available nightly at the sushi counter (eight seats). The full beak-to-tail yakitori set requires 48 hours' advance booking. Please ask when making your reservation.
