Experiences at Hotori
Three ways to sit down to the chef's work: the Beak-to-Tail yakitori from a whole bird (£102), the Yakitori Omakase and the Edomae Sushi Omakase (£50 each). All by 24-hour pre-order, secured with a £25 deposit per set.

The dish Hotori was built around — created by owner-chef Shiwei Zheng, who spent years learning to break a single chicken into seventeen distinct cuts by hand. Each setting uses one whole Fosse Meadows bird: free-range, slow-reared in small flocks to at least 81 days, among the best chicken in Britain. Every part is grilled — from familiar thigh and wing to the prized bonjiri tail, the oyster, the soft bone — seasoned and cooked to order over white-binchotan charcoal, prepared fresh the same day. Seventeen skewers, one bird, nothing wasted.

The grill, in miniature
Yakitori Omakase
£50 per person · food only
A seat at the grill, and the chef choosing for you. Eight yakitori cuts and two vegetable skewers, drawn from the same whole Fosse Meadows chicken as the Beak-to-Tail, each seasoned and grilled to order over white-binchotan charcoal an arm's length away. There is no menu to read; you watch every skewer turn and arrive in its own time, from crisp wing to soft, smoky thigh.
The Edomae counter
Edomae Sushi Omakase

The work of head sushi chef Shunji Irokawa — Tokyo-trained, more than twenty-five years at the counter, three consecutive Michelin Plates. It is built on restraint: the day's best fish, aged and cured in the Edomae tradition, set on warm, hand-formed rice with Kyoto vinegar. Seasonal appetisers, a starter, then five nigiri and four maki, each piece passed to you one at a time. The fish is allowed to speak.
Private dining & groups
The counter seats eight; the dining room around forty. Below, our basement cocktail bar Brass Dove — a London speakeasy group with bars across the city — is available for private hire, and for lunch groups of around twenty to thirty (minimum spend from £50 per head on food).
